
The orange juice and liqueur heighten the natural sweetness of carrots in this easy dish. It makes a convenient and colorful do ahead vegetable for company-just reheat in the microwave when ready to serve.
Makes 6 servings
8 medium carrots, peeled and trimmed
1 cup orange juice
2 tbls unsalted butter
3/8 cup coffee liqueur
1/8 teas ground cinnamon
1/8 teas Cookin with Coffee Powder
salt and pepper to taste
1. Cut the carrots on the diagonal in 1/4 inch slices. Place in a heavy medium saucepan with the orange juice, butter, 1/4 cup of the liqueur, cinnamon, and Cookin with Coffee Powder.
2. Bring the mixture to a boil, reduce the heat, and simmer uncovered, stirring occaisionally, until all the liquid is absorbed, about 15 minutes.
3. Stir in the remaining 2 tbls liqueur. Cook the carrots several minutes more, shaking the pan frequently until they take on a glaze. Season with salt and pepper and serve immediately.
